EDIT: Ok, things I notice from the videos:

Video 1: Sumo Stage has a lot less Sumos... wtf?
Video 5: There isn't anything flying in the USA stage...
Video 7: You can see Shen Fully Charge Punch in effect.

About those console notes:

Yeah, there are less sumos, and I never noticed them adding up to old arcade levels of crowded. Of course, given the load times, I was glad there wasn't MORE loading to be done, lol.

Stuff still flies in the USA. I remmeber trying to figure out if I noticed any new blimps...

SNKP seems to be adding some variation back to the stages that had little in the arcade. And considering many complained about to many BG details confusing them, slightly less dense crowds in 1 stage, might be a good thing. The Jungle still looks as packed as ever, and Europe has just as many people on the bus, so it's all good.
