Any reason to use stun fang or spin heel attack?
Stun Fang + Spin Heel follow does more damage than Crab Clutch. It can also be used in BC combos like b~f+D, qcf+A SC to A,A,f/b,B,C (S)DM or b~f+D, qcf+A, dp+B [1 hit] SC to qcf,hcb+C DM. The advantage to Crab Clutch is that it gives much better recovery allowing you to pressure your opponent on wakeup (midscreen only, in the corner Spin Heel will give you plenty of time since you recover right next to them).
Ah ok, so with meter you can do a super out of stun fang?

For those 2 maxmode combos, how do you get stun fang to come out? I always get (DC) spin fall.

Try doing b~f+K with heavy kick (D) into qcf+P. Also, instead of doing straight back charge to forward, charge back then do a half circle forward. This post answers it:
